Maison Premiere

Maison Premiere is an oyster house and cocktail bar on Bedford Avenue, opened in 2011 by Joshua Boissy and Krystof Zizka. The raw bar runs more than 30 oyster varieties sourced directly from farmers, and the bar claims the largest absinthe selection in the U.S., served at a replica of the absinthe fountain from New Orleans' Olde Absinthe House. Dinner runs until 10:30 p.m. nightly, brunch is served 10 a.m. to 3:30 p.m. on weekends, and there's a seasonal garden open April through November. It won the James Beard Award for Outstanding Bar Program in 2016 and has repeatedly made the World's 50 Best Bars and North America's 50 Best Bars lists.
